Soffritto

Soffritto is a taste base and the foundation of every Italian food.

There are four soffrittos:
- Oil and a clove of garlic
- Oil, a clove of garlic and Peperoncino chili
- Oil, a clove of garlic, Peperoncino chili and sardine fillet
- Butter and thinly cut onion

Pour 2 tbsp of olive oil or butter (depending on which soffritto you make) over the pan and the heat as low as possible. Add a clove of garlic, Peperoncino chili, onion and/or sardine fillet. Allow to simmer for 10 minutes so that the garlic/onion just barelly bubbles but does not brown. Remove the garlic before you start cooking further.
